“Following the standards set by Fairmont, I look after the whole operation of the restaurant especially in the absence of Chef de Cuisine from breakfast Ala Carte, lunch in the pool and beach with a capacity of 520 sun-loungers. I do an average of 300 to 800 covers daily.”
